A little bit of both. I've taken around 35 Quail this year and only have 6-10 left. We tore through nearly all of the Pheasant from the SD trip already, I believe I only have half a dozen so left. I did them up lemon piccata style, a few in a mushroom marsala over angel hair pasta, and my favorite, wrapped in streaky bacon and lightly battered over pasta. When we were in SD they made mushroom soup with wild rice and minced/pulled Pheasant in it, it was amazing. I hope to try and recreate that the next time we have a cold spell.
We usually hunt dove heavy the first few weeks of the season and eat them all up right after the hunt dove wrap style (bacon wrapped with cream cheese and jalapeņo) so there's never any of those left. I think I still have some Chukar left in the freezer from last year as well, by far the best tasting bird IMHO.
