With the 270 Win you'll be in fine shape for North American plains game, even elk I've been told, but I've never hunted elk. Several years ago I had a 270 Win that loved the 130gn Sierra Game Kings, 130gn Nosler Ballistic Tips, and 140gn Hornady Interlocks. It did not like the 130gn Hornady Interbond bullets. I think it was their smaller amount of bore-to-bullet contact that made them less accurate compared to the other bullets. The barrel harmonics were different enough with that bullet to make a big change to the point of impact compared to the other bullets.
Most of the hunting rifles I see in the field are 270 Win, 7mmm Rem Mag, or 30-06 Springfield, so you're in fine shape with your new 270 Win. Good luck.
