would it be possible to load a .257 to 2800fs with 120gr bullet?
has anybody tried it?

It appears that the way to do it is to try Accurate 8700 powder. Using the range listed on their website, you can load from 2650fps up to 3050fps. It appears that something like 77gr would likely get you in the 2800fps neighborhood, but then again, the question is, why? Here is the address:

As a side note, I use this powder in my 270Wby and it is deadly accurate. Good luck.
