I think the 225 would be my elk set up and for most everything, then the 250 or 275 for really big stuff, brown bears, etc...
I have the MKV Fibermark, nothing wrong with the Accumark, but remember the accumark only has a stainless barrel, the action/receiver is not stainless! You could have ER Shaw build you a .340wby with a stainless action and barrel for less than a MKV in a semi-custom set up, which I would at least look into and consider.
If I had er shaw build me one, I would go stainless action and barrel(matte, not gloss), synthetic stock, 24-25" barrel, not 26", fluted optional... spiral might be cool.
the .340wby does not require a 26 barrel.

part of me would like a .340wby with a controlled feed action, so 1 other option would be to buy a Winchester model 70 in a .338win.mag and re chamber the barrel into .340wby assuming the action is long enough and cut the 26" barrel down to 24-25"
btw I wouldn't limit myself to the 200-210 and 250's, often times the 225/250's are flatter or just as flat as the 200/210 due to the higher BC's.
the 225 Tipped TSX has a higher BC than the 250 NP(the highest BC factory load from weatherby) so 225 Tipped TSX has higher BC and faster than the 250 NP!
