Good table fair

 I have always considered  camp/safari meals a major part of hunting, had several different meats in Africa, blesbuck was one of my favourite meats. In Canada ; dall ram is terrific. Just wondering what everyones ratings on table fair world wide would be, please post your favourites - this should be interesting.

While in South Africa last year the cook their made a nice stew out of Rino cheek meat after myself and another hunter asked him to use it somehow.
But my favourite was blue wildebeest testicals! He cut them up in bite size piece, crumbed and fried them. Absolutely delicious. When I head back next year I am shooting a few cull wildebeest just for their nuts... lol

While in South Africa, I had Kudu, Eland, Wildebeest, Impala, Hartebeest, Blesbuck,  and Gemsbok.   I want to say that Kudu, Eland & Wildebeest were the best.  Our chef Tiny cooked everything on an open fire pit, flat out delicious.  After eating some of this great stuff, I  made a comment that venison taste like sh*t, and everyone busted laughing out loud.

I tend to agree - whitetail is best masked with spice in most areas- even grain fed. I did shoot a big mulie buck in the prairie grass lands that smelled very sweet when cooking it, I was going to make a stew. My wife does not like most wild meats yet she commented on how good it smelt when pre frying the meat- needless to say I had to get another package out as most of the first batch was eaten out of the pan. I tend to agree about the meat in Africa being the best fair overall, it was delicious. Eland steak cooked over open hot coals was superb. Can honestly say I did not have the opportunity to eat wildebeest teaticles- maybe next time.

6. White Tail - don't particularly like this
7. Never had any African fare.

Three years ago there was a Pheasant Season Opening Day mountain oyster feed at the American Legion near my house. A large number of hungry hunters, including me and three buddies, enjoyed the great food and the general gathering of hunters with stories of the birds that got away.
Of all the gin joints in all the towns in all the world, she walks into mine.

I've had a handful of game, though none of the African variety. My list as it stands now:

1. Braised Ostrich - this was absolutely delicious, and melted in my mouth. Had it at a country club where I worked during college.
2. White-tail - I guess I'm the odd man out on this one. I've found most white-tail to be delicious, and I don't so anything special to it. One thing which really improved mine was to quit having any beef or pork fat ground in. When I stopped that, the meat stopped tasting sour. I put a little olive oil in the pan, set my flame to medium heat, and brown the ground for tacos, spaghetti, chili, dirty rice, or whatever else I can concoct.
3. Duck - I've had wild duck several ways, and as long as its prepared well, it is delicious.
4. Alligator - had the opportunity on several occasions to enjoy alligator. Mostly the tail, lightly breaded and fried, but also some stew once which I was told had other cuts in it. Very gumbo-like, and delicious.
5. Elk - granted, I've had this only once, and that was a slightly overcooked burger, but I was not thrilled with it. I'm hoping to get my own and discover it to be better than I remember.

I have been fortunate to have tried most everything listed here except for Rhino Jowls and wildebeests nuts.Springbok was my favorite of the African game.Toughest meat I ever had was Wildebeest and Nilgai here in Texas.Granted both were old. Some not listed I have eaten is rattlesnake and beaver.Yeah rattlesnake tasted like chicken  ;D and the beaver reminded me of bear.Whitetail fried backstrap is still my favorite.

Hey Roger, do you mind elaborating a bit more on how you prepare/cook  the back straps?  I'm always looking for new recipes.  LOL.  Maybe we should start a new topic on how we cook what we hunt. :D

I forgot to mention two.  Bison is good, and would rank in the middle somewhere.  I'd still rather have venison.  Don't know why y'all don't like it.  And I've had rattlesnake.  It does taste like chicken.

I've got some backstrap recipes I'll share on a cooking thread if one is started.

I find that ageing most game will do wonders for flavor and texture. Remember that the price of a beef steak is based on how old it is.  I dry age venison from 10-14 days at 36 degrees. Freezing will do the same thing but you have to make sure to keep it air tight. I have frozen mule deer for over two years before it became edible.

Never have had the pleasure  of eating any African game. But I hear it is very good.
Here in MI. theres A big difference between northern whitetail and those from the farm country in the south. Corn feed Deer much better.
But some of the best meat I have had was from my brothers small black bear from A few years ago. it was in the butchers cooler in less than 2 hrs. after being shot.
My sister in law made 2 bear roast when I was over and I couldn't believe how good it was both times.
But like ridgerunner I have had nasty black bear too. so bad I wouldn't eat it.
But I still would rate the north American Game I have had in this order
1 Elk
2 Moose
3 Bison
4 Deer
5 Caribou
6 Black bear
7 Antelope
