While i've not shot one, all the literature says it's just fine. Between the two you have I'd opt for the 7mm as it would have better penetration. A well placed partition or a-frame if you load should would be my choices for what that's worth. I wouldn't hesitate to shoot anything in North America with the exception of a grizzly bear with that combo.

What you read was most likely written by a troll on another gun forum who has a contempt for Weatherby rifles. Except for more bullet weights and availability of ammo, the 7 Wby mag outshines the -06 completely. The 7mm Wby and the 7 Rem mag are close in comparison, but the Wby gets the edge. Even the 7 Rem mag has better ballistics than the-06, its faster, has more energy, and has a flatter trajectory.
The 30-06 is a great round also, but the Big 7's outshine it. (though you may not believe by much, and again, the animal won't know the difference either)

A little late for this thread, but, a 7mm Wby factory loaded 175 gr ammo is loaded to 3000+fps, and when you look at the ballistics of that, it put's on par with factory loaded 180 gr 300 Win mag. That's quite a bit better and the 30-06.
